- Fondant does not taste bad!!! Yes, it's very sugary, but it should taste like a marshmallow... yum! There are even new fondants out there that are flavored like buttercream. If you're having a wedding in the middle of summer, fondant is your best bet for the cake holding up and looking good.
- Have a design idea in mind before you meet with your cake designer. Look at magazine, websites etc. You don't have to know exactly what you want, but if you have a few ideas of what you like and what you don't like, it's a lot easier to come up with a design for you.
- Be adventurous. It's one of the only times in your life when you're going to have a cake that's a piece of art. Don't do the ribbon and dots, everyone does.
- Think seasonally in design and flavors.
- Ask your baker if they make cakes from scratch, using real butter, vanilla's etc. Mix batters just aren't as good.
- Your cake designer is there to work with you, so speak up and tell them what type of look you want, but also be open to their ideas.
- If you have a maximum price, let the designer know, many times they'll be willing to work with you, or at least offer up designs that will fit in that budget.
- Give swatches if you want a specific color. Most designers can match anything.
- If you want an interesting and personal cake topper, ask your cake person, they may be able to point you in the right direction or make something themselves!
- If there's a flavor combination that you want and don't see, ask... many bakers like to try out new flavor combinations.
Jennifer also shares with brides some current trends:
- Round cakes are making a come back; square is passe. Metallics seem to be trendy lately.
- Interesting color combinations such as grey and yellow, silver and orange, chocolate brown and light green will be popular over the next couple of years.
- Cakes with the couple's interests and personalities displayed on them are popular too. Groom's cakes for rehearsal dinners--it gives the groom a special time that reflects his interest.
